Recipe: Maine Lobster Roll

(serves 4)


* 1 lb. cooked, chilled Maine Lobster meat
* 1 baguette
* 8 oz. fresh mozzarella, sliced into 8 pieces
* ½ cup fresh basil leaves
* 2 scallions, sliced on the bias
* 1 Tbsp. olive oil
* ½ cup mayonnaise
* 1 Tbsp. sweet chili sauce or sweet pepper relish


1. Slice baguette lengthwise; hollow out partially, leaving crust shells.
2. Mix mayonnaise and sweet chili sauce. Spread mixture in both crust shells.
3. Stack basil leaves, roll up tightly, and slice across roll into thin strips. Sprinkle over both halves.
4. Sprinkle scallions over each half.
5. Spread cheese over one side of the bread.
6. Sauté Maine Lobster quickly in olive oil, then place on the cheese side to melt it.
7. Close halves, slice on the bias, and serve.
