Recipe: Lobster, Curried

Chef Wilfred Beriau

  • Onions, diced, small – 4-5 oz
  • Ginger, minced – 1 inch
  • Minced garlic – 1 t

Cook this in ghee till golden brown

Add:

  • Turmeric – 1t
  • Cumin – ¾ t
  • Chili pwd – ¾ t
  • Coriander, grd – 1 t
  • Salt & pepper – TT

Cook for a few minutes

Add:

  • Tomato, diced – 2 cup
  • Cilantro, chopped – 2 T

Cook 4-5 minutes

  • Add cream – 1 1/2 cup
  • Or, ½ cream and ½ coconut milk

Cook 8 minutes (reduce)

Add:

  • Lobster, fresh, blanched, large pieces – 1 lb

Add to mix, cook about 3 min.

Correct the seasoning and thickness.  If it is too thin, mix ½ tsp ghee and ¾ t flour, stir into mix, it should tighten.  Sprinkle with fresh chopped cilantro at finish, toasted coconut, and maybe some blanched minted peas.  Serve with Basmati rice and Indian Flat bread and mint chutney.  On a large serving plate, make a well shaped mound of rice and place the lobster into the center.  Sprinkle with garnishes.

Minted Chutney:

  • Cilantro, washed – 1 bunch
  • Mint leaves, washed – 1 bunch
  • Chilies, (jalapeno are okay) – 3-4
  • Lime juice, fresh, from – ½ lime
  • Garlic (optional) – ½ t
  • Peanuts, unsalted – 2 oz
  • Sugar – ½ t
  • Cumin, ground – ½ t
  • Water, if needed to blend
  1. Rough chop the mint and cilantro, and place with all thei ingredients into a blender.
  2. Blend till smooth.
  3. To keep, store refrigerated in an airtight container till you need it.

You may add a little yogurt to this to make a smoother texture and milder taste.  Drizzle on top of dish or serve in a dipping bowl.

Chipati (Indian flat bread):

  • Whole wheat flour – 3 C
  • Salt – 1 t
  • Water – 1 c
  • Ghee – 1 T

Yield 24

  1. Sift the dry ingredients together into a bowl, make a well, add the water , ghee and knead 10 minutes.  Let rest 1 hr.
  2. Divide into 24 portions, and roll about 5 “on a floured board.
  3. On a hot griddle with a little ghee, place bread, and toast to lightly brown and bubbly, both sides, after bubbling, press and turn with the spatula till a puffy pillow forms.  Serve.
