Recipe: Curried Maine Lobster with Chapati and Mint Chutney

(serves 4-6)

Ingredients

* 1 Tbsp. butter, room temperature
* ½ cup yellow onions, peeled and diced
* 1 inch piece fresh ginger, grated
* 1 tsp. minced garlic
* 1 tsp. each, turmeric, ground coriander, salt
* ¾ tsp. each, cumin, chili powder
* ½ tsp. ground black pepper
* 2 cups fresh tomatoes, diced
* 2 Tbsp fresh cilantro leaves, chopped
* 1 cup heavy cream
* ½ cup coconut milk
* 1 lb. blanched Maine Lobster meat, chopped into large pieces
* ¼ cup fresh cilantro leaves, chopped
* 2 Tbsp. toasted shredded coconut
* 1 cup frozen and rinsed sweet peas
* 1½ tsp. fresh mint leaves, shredded
* 3 cups prepared basmati rice

Method

1. Sauté onion in butter until translucent. Stir in ginger and garlic and cook an additional 2 minutes.
2. Stir in turmeric, coriander, salt, cumin, chili powder, and black pepper
3. Add tomatoes and cilantro and cook 5 minutes.
4. Stir in heavy cream and coconut milk. Cook 8 minutes until cream is reduced and stir in Maine Lobster meat. Cook an additional 2-3 minutes.
5. Add remaining cilantro, coconut, peas, and mint. Remove from heat and serve with rice, chapatti, and chutney.

Mint Chutney
Ingredients

* 1 bunch fresh cilantro leaves
* 1 bunch fresh mint leaves
* 3 or 4 fresh jalapenos, seeds removed
* ½ lime juiced
* ½ tsp. garlic minced
* 2 oz. roasted, shelled and unsalted peanuts
* ½ tsp. sugar
* ½ tsp. ground cumin
* 1 Tbsp. water

Method

1. Rough chop mint and cilantro, and place with all ingredients in blender.
2. Blend till smooth.
3. Store refrigerated in an airtight container until needed.
4. Adding a little yogurt makes milder chutney.

Chapati (Indian flat bread)
Ingredients

* 3 cups whole wheat flour
* 1 tsp. salt
* 1 cup water
* 1 Tbsp. + ¼ cup ghee (clarified butter)

Method

1. Sift dry ingredients together into a bowl, make a well; add water and ghee and knead 10 minutes. Let rest 1 hour.
2. Divide into 24 portions, and roll about 5” on a floured board.
3. Toast on a hot griddle with a little ghee until lightly brown and bubbly, then press and turn with spatula till a puffy pillow forms.
