Recipe: Creamy Maine Lobster Farfalle

(serves 6)

Ingredients

* 1 lb. farfalle pasta
* 1 lb. + 2 oz. cooked Maine Lobster meat, chilled
* 1 Maine Lobster coral (optional)
* 1 Tbsp. diced celery
* 2 scallions, sliced on the bias
* 6 grape tomatoes, halved
* 2 Tbsp. basil leaves, sliced into strips
* 1½ tsp. salt
* ½ tsp. ground black pepper
* ¼ cup grated parmesan cheese
* ¼ cup dry white wine
* 2 ounces Maine Lobster demi-glace
* ½ cup heavy cream
* 1 Tbsp. butter, cold
* ½ Tbsp. olive oil
* ¼ cup flat leaf parsley, chopped

Method

1. Warm dinner plates in oven.
2. Sauté celery and onion until translucent.
3. Add tomatoes and coral, breaking up coral for even coloring.
4. Stir in demi-glace, wine, and reduce by half.
5. Add the pasta, basil, salt, pepper, and bring to a boil, then simmer.
6. Stir in Maine Lobster and cook two minutes.
7. Turn off the heat, and stir in the cheese.
8. Serve on warmed plates, sprinkle with parsley.
